Description
Sweet potato rounds roasted until caramelized, topped with creamy brie, drizzled with balsamic glaze, and finished with thyme.
Ingredients
2 medium sweet potatoes, peeled and sliced into ½-inch rounds
2 tbsp olive oil
1 tbsp maple syrup
Salt and pepper, to taste
120 g (4 oz) Brie cheese, cut into bite-sized slices
1 tbsp balsamic glaze
Fresh thyme leaves, for garnish
Instructions
1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
2. Toss sweet potato slices with olive oil, maple syrup, salt, and pepper.
3. Arrange slices on tray in a single layer and roast 25–30 minutes, flipping once halfway.
4. Remove tray, place a slice of brie on each round, return to oven for 2–3 minutes until melted.
5. Drizzle with balsamic glaze, sprinkle with thyme, and serve warm.
Notes
Store leftovers in an airtight container for up to 2 days.
Reheat in oven at 350°F (175°C) for 5–7 minutes.
Prepare sweet potatoes ahead, then add brie before serving.
