Description

Ingredients

  • 2 cups cooked chicken breast (shredded or diced)
  • ⅓ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 stalk celery (finely chopped)
  • 1 tablespoon fresh parsley (chopped (optional))
  • 1 teaspoon lemon juice
  • Salt and black pepper (to taste)
  • 4 buttery croissants (sliced in half)
  • Optional: lettuce (tomato slices, or baby greens for layering)

Instructions

  1. In a mixing bowl, combine the chicken, mayo, Dijon, celery, lemon juice, and parsley.
  2. Mix until well coated. Taste and season with salt and pepper.
  3. Slice each croissant in half horizontally.
  4. Layer the bottom half with lettuce (if using), followed by a generous scoop of chicken salad.
  5. Close with the top half of the croissant and serve immediately, or refrigerate for up to 2 hours before serving.

Notes

Rotisserie chicken works beautifully here and saves time. For extra texture, add halved grapes or chopped pecans. For a lighter version, use Greek yogurt in place of some or all of the mayo. Assemble just before serving to keep the croissants fresh and flaky.
