Ingredients
- 2 cups cooked chicken breast (shredded or diced)
- ⅓ cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 stalk celery (finely chopped)
- 1 tablespoon fresh parsley (chopped (optional))
- 1 teaspoon lemon juice
- Salt and black pepper (to taste)
- 4 buttery croissants (sliced in half)
- Optional: lettuce (tomato slices, or baby greens for layering)
Instructions
- In a mixing bowl, combine the chicken, mayo, Dijon, celery, lemon juice, and parsley.
- Mix until well coated. Taste and season with salt and pepper.
- Slice each croissant in half horizontally.
- Layer the bottom half with lettuce (if using), followed by a generous scoop of chicken salad.
- Close with the top half of the croissant and serve immediately, or refrigerate for up to 2 hours before serving.
Notes
Rotisserie chicken works beautifully here and saves time. For extra texture, add halved grapes or chopped pecans. For a lighter version, use Greek yogurt in place of some or all of the mayo. Assemble just before serving to keep the croissants fresh and flaky.
