Description
This slow cooker corned beef brisket is rich, tender, and deeply flavored thanks to a perfect mix of pickling spices, vegetables, and a splash of lager. It’s an effortless way to serve a comforting, classic meal.
Ingredients
1 corned beef brisket (3–4 pounds), including seasoning packet
1 large onion, cut into large chunks
3–4 carrots, peeled and cut into large pieces
2–3 celery stalks, cut into large chunks
2 cups unsalted beef stock
1 bottle (12 oz) lager beer (or water)
Instructions
1. Rinse the corned beef brisket under cold water to remove excess salt.
2. Pat the brisket dry with paper towels.
3. Place onions, carrots, and celery into the bottom of the slow cooker.
4. Lay the brisket on top of the vegetables, fat side up.
5. Sprinkle the seasoning packet evenly over the meat and vegetables.
6. Pour in the beef stock, followed by the beer, along the sides to preserve seasonings.
7. Cover and set the slow cooker to LOW.
8. Cook for 8–9 hours until the meat is fork-tender.
9. Transfer the brisket to a cutting board. Let rest for 10 minutes before slicing.
10. Slice against the grain and serve with vegetables and juices from the cooker.
Notes
Use water instead of beer if desired. The flavor will be milder but still rich.
Avoid salted broth to prevent the dish from becoming overly salty.
Do not rush the cooking process. Low and slow ensures tenderness.
Leftovers are excellent for sandwiches, hash, or sliders.
