Ingredients

  • 60 Ritz crackers (crushed)

  • ½ cup salted butter (melted)

  • 2 packages pistachio instant pudding mix (3.4 oz each)

  • 1½ cups cold milk

  • 4 cups vanilla ice cream (softened)

  • 1 tub (9 oz) Cool Whip or whipped topping

  • Optional toppings: crushed pistachios or reserved cracker crumbs


Instructions

  1. Prepare the crust: In a bowl, mix crushed Ritz crackers with melted butter. Press two-thirds of the mixture into the bottom of a greased 9×13-inch dish. Chill for 10 minutes.
