Ingredients
60 Ritz crackers (crushed)
½ cup salted butter (melted)
2 packages pistachio instant pudding mix (3.4 oz each)
1½ cups cold milk
4 cups vanilla ice cream (softened)
1 tub (9 oz) Cool Whip or whipped topping
Optional toppings: crushed pistachios or reserved cracker crumbs
Instructions
Prepare the crust: In a bowl, mix crushed Ritz crackers with melted butter. Press two-thirds of the mixture into the bottom of a greased 9×13-inch dish. Chill for 10 minutes.
Make the filling: In a large bowl, whisk pistachio pudding mix with cold milk until smooth. Add softened ice cream and whisk until the mixture is light green and fully combined.
Assemble: Pour the pudding mixture over the chilled crust and spread evenly. Top with Cool Whip and sprinkle with reserved cracker crumbs or chopped pistachios.
Chill: Cover the dish and refrigerate for at least 4 hours, or until fully set.
Serve: Slice into bars and serve cold. Store leftovers covered in the refrigerator for up to 3 days.
Notes
Make sure the ice cream is softened, not melted, for best results.
Instant pudding is a must—avoid cook-and-serve varieties.
