Everything Bagel Brittle is a crunchy sweet-salty snack made with caramelized sugar, butter, and everything bagel seasoning. It’s an unexpected flavor twist that’s gone viral for a reason.
Ingredients
1 cup granulated sugar
½ cup light corn syrup
¼ cup water
2 tbsp unsalted butter
½ tsp vanilla extract
½ tsp baking soda
2–3 tbsp everything bagel seasoning
(Optional) pinch of chili flakes or rosemary
(Optional) white chocolate for drizzle
Instructions
1. Line a baking sheet with parchment or silicone mat.
2. In a medium saucepan, combine sugar, corn syrup, and water. Stir just until sugar dissolves.
3. Let the mixture boil without stirring until it reaches 300°F or turns deep amber.
4. Quickly add butter and vanilla. Stir until melted and smooth.
5. Add baking soda and stir. The mixture will foam up.
6. Pour immediately onto the lined baking sheet and spread slightly.
7. Sprinkle everything bagel seasoning evenly on top.
8. Let it cool completely for 30–45 minutes.
9. Break into shards once hardened.
10. Store in an airtight container at room temperature.
Notes
Work quickly after adding the baking soda — the mixture hardens fast.
Store brittle in a cool, dry place for up to 2 weeks.
Avoid refrigeration to prevent moisture absorption.
Break the brittle by hand for rustic, jagged shards.
Pair it with soft cheese for an appetizer twist.
