Ingredients

1 cup mascarpone cheese, room temperature

1/2 cup powdered sugar

1 tsp vanilla extract

2 tbsp fresh lemon juice

Zest of 1 lemon

1 cup heavy cream, chilled

Optional toppings: 1/4 cup lemon curd, fresh mint leaves, crushed shortbread cookies


Instructions

1. Whip chilled heavy cream to soft peaks and refrigerate.

2. Beat mascarpone cheese, powdered sugar, vanilla, lemon juice, and zest until smooth.

3. Fold whipped cream gently into mascarpone mixture until airy.

4. Spoon or pipe mousse into glass cups.

5. Add lemon curd, mint, or cookie crumbs as toppings.
