This No-Bake Lavender Posset with Blackberries is an elegant, silky dessert that sets beautifully in the fridge. Lightly floral and tart, it’s perfect for spring and summer gatherings.
Ingredients
2 cups heavy cream
½ cup granulated sugar
1½ tsp dried culinary lavender
2½ tbsp fresh lemon juice
½ cup fresh blackberries (for topping)
Instructions
1. In a saucepan, combine cream, sugar, and lavender. Simmer for 2–3 minutes.
2. Remove from heat and let steep, covered, for 10–15 minutes.
3. Strain out lavender buds using a fine mesh sieve.
4. Gently reheat if needed, then stir in lemon juice until fully combined.
5. Pour into ramekins or glasses. Chill uncovered for 30 minutes, then cover and refrigerate at least 4 hours.
6. Top with blackberries just before serving.
Notes
Use culinary-grade lavender only.
Let posset chill overnight for a firmer set.
Do not substitute low-fat cream—use at least 36% fat.
