Ingredients

1 seedless watermelon (not whole)

1 seedless yellow watermelon (optional)

1 1/2 cups mixed berries

1 kiwi, cut into a flower shape

1 peach or nectarine, thinly sliced

Fresh mint for garnish

Toothpicks for assembly


Instructions

1. Slice a thick round from the watermelon and remove all rind.

2. Trim into a cake shape.

3. Optional: Repeat with yellow watermelon for a second layer.

4. Stack the layers, securing with a toothpick if needed.

5. Slice fruit and arrange decoratively on top and sides.

6. Optional: frost with whipped cream or coconut cream.

7. Chill before serving. Remove toothpicks before eating.

Notes

Decorate just before serving for best texture.
