Description

This savory Dutch baby with whipped feta and herbs makes the perfect brunch centerpiece. It’s crisp on the outside, soft inside, and topped with creamy whipped feta and fresh herbs.


Ingredients

3 large eggs (room temperature)

½ cup all-purpose flour

½ cup warm whole milk

1 tbsp melted butter (plus 2 tbsp for pan)

½ tsp salt

Pinch of black pepper

½ tsp garlic powder

1 cup feta cheese

¼ cup Greek yogurt

1 tbsp olive oil

1 tsp lemon juice

1 tsp chopped dill

1 tsp chopped chives


Instructions

1. Preheat oven to 425°F. Place a cast-iron skillet in the oven.

2. Blend eggs, flour, milk, salt, garlic powder, and melted butter until smooth.

3. Remove hot skillet, melt 2 tbsp butter inside, and swirl to coat.

4. Pour in batter and bake for 18–20 minutes until puffed and golden.

5. Blend feta, yogurt, olive oil, lemon juice, dill, and chives until smooth.

6. Spread whipped feta over Dutch baby or serve it on the side.

7. Garnish with fresh herbs and cracked pepper. Serve immediately.

Notes

Use block feta for best texture.

Avoid opening the oven during baking.

You can add toppings like roasted tomatoes, smoked salmon, or poached eggs.

Store leftovers in the fridge for up to 2 days. Reheat in oven.
