This slow cooker tri tip roast is melt-in-your-mouth delicious, with tender beef that’s been slow-simmered in rich gravy alongside carrots, potatoes, and onions. It’s the perfect comforting dinner for busy days or lazy Sundays, and your whole home will smell amazing while it cooks.

  • 23 lb tri tip roast

  • 1 tbsp olive oil

  • Salt and black pepper, to taste

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • 1 tbsp Worcestershire sauce

  • 1 cup beef broth

  • 1 tbsp balsamic vinegar (optional for depth)

  • 1 lb baby potatoes, halved

  • 34 carrots, peeled and chopped

  • 1 yellow onion, sliced

  • 2 cloves garlic, minced

  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  1. Sear the roast: Season the tri tip generously with salt, pepper, garlic powder, onion powder, and smoked paprika. Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned (about 2–3 minutes per side).

  2. Layer the slow cooker: Add chopped carrots, potatoes, onions, and minced garlic to the bottom of the slow cooker. Place the seared roast on top.

  3. Add liquid: In a small bowl, mix beef broth, Worcestershire sauce, and balsamic vinegar. Pour over the roast.

  4. Cook low and slow: Cover and cook on LOW for 8–9 hours or on HIGH for 4–5 hours, until the meat is fork-tender and vegetables are cooked through.

  5. Optional: Thicken the gravy: Remove roast and vegetables. Stir 1 tbsp cornstarch into a small amount of water, then whisk into the remaining liquid. Cook on high for 10–15 minutes until thickened.

  6. Slice and serve: Slice the roast against the grain, plate with vegetables, and drizzle with that delicious gravy.

Notes

  • Want more flavor? Marinate the tri tip overnight in your favorite herb blend.

  • Prefer a thicker sauce? Add a second tablespoon of cornstarch or reduce the gravy on the stovetop.

  • Great with crusty bread or mashed potatoes as a side.
