Description

Ingredients
1 cup granulated sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1/4 cup water
1 cup dry roasted peanuts
1 tablespoon unsalted butter
1 teaspoon baking soda
1/2 teaspoon cayenne pepper
1/2 teaspoon crushed red pepper flakes
Instructions
1. Line a baking sheet with parchment paper and grease it lightly.
2. In a medium saucepan, combine sugar, corn syrup, salt, and water.
3. Heat over medium heat, stirring until the sugar dissolves and the mixture comes to a boil.
4. Insert a candy thermometer and cook without stirring until the mixture reaches 300°F (hard crack stage).
5. Stir in the peanuts and continue cooking for 1-2 minutes.
6. Remove from heat, then quickly stir in the butter, baking soda, cayenne, and chili flakes.
7. Immediately pour the mixture onto the prepared baking sheet and spread it evenly.
8. Let it cool completely at room temperature.
9. Break the brittle into pieces and store in an airtight container.
Notes
Adjust the spice level to your preference by increasing or decreasing the chili flakes.
