Description

Golden roasted sweet potato rounds topped with creamy burrata, honey drizzle, and fresh herbs—perfect for brunch, parties, or a light snack.


Ingredients

2 sweet potatoes, sliced into thick rounds

2 tbsp olive oil

Salt and pepper to taste

6 oz burrata cheese

2 tbsp honey

Fresh basil or thyme leaves


Instructions

1. Preheat oven to 400°F (200°C).

2. Toss sweet potato slices with olive oil, salt, and pepper.

3. Roast on a baking sheet for 25–30 minutes, flipping once.

4. Remove from oven and let cool slightly.

5. Tear burrata into bite-size pieces.

6. Place one piece on each sweet potato round.

7. Drizzle with honey generously.

8. Garnish with fresh herbs.

9. Serve immediately while warm.

Notes

You can roast the sweet potatoes ahead and reheat before serving.
