Ingredients
  

  • 2 cups cooked chicken breast shredded or diced
  • cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 stalk celery finely chopped
  • 1 tablespoon fresh parsley chopped (optional)
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • 4 buttery croissants sliced in half
  • Optional: lettuce tomato slices, or baby greens for layering

Instructions
 

  • In a mixing bowl, combine the chicken, mayo, Dijon, celery, lemon juice, and parsley.
  • Mix until well coated. Taste and season with salt and pepper.
  • Slice each croissant in half horizontally.
  • Layer the bottom half with lettuce (if using), followed by a generous scoop of chicken salad.
  • Close with the top half of the croissant and serve immediately, or refrigerate for up to 2 hours before serving.

Notes

Rotisserie chicken works beautifully here and saves time. For extra texture, add halved grapes or chopped pecans. For a lighter version, use Greek yogurt in place of some or all of the mayo. Assemble just before serving to keep the croissants fresh and flaky.
